Surf-fur Gluten Free Sweetpotato Brownies!
Who doesn’t love brownies?! To satisfy our sweet tooth and keep us energized for water adventures we make these delicious gluten free sweetpotato brownies.
Heat oven to 375*F
1 Large sweet potato (or yam) peeled and grated
2 eggs
2 tsp vanilla extract
1/2 cup honey
1/2 cup olive oil
2 tbsp gluten free flour
1 tbsp baking soda
3/4 cup cocoa powder
1/3 cup shredded coconut
Mix all and place into greased 9″ X 9″ pan
Bake for 40 minutes
optional:
-add nuts
-slice brownies in half and spread almond butter
-add chocolate chips
